With astral projection:
You're not seeing with physical eyes any more than you can see dreams with your physical eyes. I don't use my eyes to see visions and images that come through during readings. it's probably the same sort of mechanism. If you have poor eyesight you can probably see pretty clearly on the astral plane, however, it's not easy to see anything on the astral plane even with perfect vision.
Intuition doesn't usually involve self doubt. If your intuition wants to make you aware of something it might say or feel like: "If you're going to go down that dark alley, you might want to get that mace out of your purse." Ego will say, "You're a god damned fool for walking around this alley so late at night. You wanna get killed or something?"
