Before I answer your questions, here's some info:

I can actually sense the difference between male and female energy using my... err... well, it's sort of an internal interpreting mechanism. I've described it before like this:

There seem to be two layers to reality. First, there's the physical one we can move around in that seems to have space and time, or rather, present moment expansion. Second, there's another one that seems to be independent of space and time. We seem to exist on both levels (I get the feeling that the external world is a projection of the second level I mentioned), and I can look at anything in the physical world and get a "reading" from the second level, but I can also transcend space and time and "project" my awareness on this inner level to get a read on things that aren't in my immediate physical surroundings.

Confused yet? I am, so lets get back on topic...

Interestingly, some women I come into contact with have what I'd describe as a very "feminine" energy, while others have a much more "masculine" energy. And their personality and general external appearance seems to always -- always -- match the energy.

In comparison to women, most males feel very closed off to me, energy-wise. It's as if they're very heavily rooted in the physical, with no "spiritual" energy in them. Women seem far more connected internally. Men who are connected internally seem to feel similar to what women feel like -- there's a lightness to their energy -- but it's slightly more... well, it's like looking at a woman in a beautiful dress and a man in a good looking suit. Both look good, but for different reasons. They have different qualities to them.

I'm not so good that you could tell me that there's a person behind an unopened door and I could tell you whether they are male and female, but I think with a bit of practice I could.

Usually, though, I'm more interested in the energetic atmosphere of my environment rather then the specifics of the people in it. Usually you can detect a lot more about the people by sensing the environment. Eg. If you walk into a room that feels thick with negativity, if you look closer, you'll probably find the person who's generating it.

So to answer your questions:

What is male or female energy? Isn't energy just energy?

I'd think of it this way:

Everything in the physical reality is made out of matter, but certain configurations of matter lead to certain characteristics. At the core, male and female energy is made out of the same base "element", but each is composed differently.

How can it have a gender, and how do you notice that?

Boy, teaching other people how to sense energy is hard. There's a good chance you already know how to do it, you're just either (A) not noticing it, (B) not consciously aware you have the ability, and/or (C) are somehow blocked off to it.

I'd suggest observing the different people in your life and seeing if you have any awareness of them on a non-physical level. Ie. What do you feel that doesn't really feel like it's located within your body?

If you feel nothing, try to imagine consciously projecting some awareness onto them, so you can "get a read". Also, be mindful that there's a difference between interpretation and internal reaction. Ie. I can look at something I don't like and feel an internal reaction -- perhaps some resistance or negativity -- but if I projected my awareness onto it, I'd get a different read, one that's more so about the actual characteristics of the object/environment and not my internal reactions.

Do note that this method may or may not work for you. I get the feeling that people interpret things differently (ie. I'm primarily able to interpret things and can sense things on many different levels). Just experiment with the main intention of raising your awareness.

How I actually developed this ability was somewhat random and spontaneous. First I experimented with manipulating my own energy by simply forming an energy ball in my hand (harder then you'd think), then, after more practice with stuff like that, I noticed that I had an awareness of not only my own energy, but also the energy around me.
