You are right in that most of the calories in a Potato come from starch. However, potatoes (skin on) are rich in nutrients- in particular vitamins C and B6, Potasium and Manganese. They are also very easy to grow, and store well. I don't base a whole meal around them, but I do eat them the same way I would any other vegetable.
