Vegan Soup
This is a delicious soup that once prepared will give one to two people some very satisfying meals.
Half a largish pumpkin chopped in pieces and steamed until tender. Remove skin when cooked if necessary.
One large onion and some cloves of garlic diced and cooked until tender in a little cold pressed olive oil and a little water.
After cooking above use the same pot to cook one sliced leek in a little water until tender.
Mash or blend in a food processor the pumpkin, onion, and garlic.
Return to the pot with the leek.
Add a tin of diced tomatoes and stir until all ingredients are combined.
You may want to add some extra salt. You can also add some chopped fresh basil leaves. Other alternatives are cumin seed, or a dash of curry powder and chilli.
Serve with crunchy bread rolls, tahini spread, or fresh ripe avocado. Delicious.
