A couple of my favorite quick meals:
A microwaved "baked" potato topped with leftover marinara sauce, chili, or split pea soup. Two big potatoes with some veggies and/or a salad on the side is quite filling.
The old British standby of baked beans on toast. Just be careful to buy baked beans that don't have pork added [maple beans are really good, but a bit sweet], or make your own when you have a day off. They keep for about a week in the fridge and can be frozen in individual portions.
Make a pot of homemade soup when you have some free time. Keeps well in the fridge and can be heated quickly in small servings ... minestrone, navy bean, pistou [vegetable soup with pesto], and taco soup are a few of my favorites.
And speaking of tacos ... a nice filling is mashed pinto or black beans mixed with veggie "hamburger" crumbles and taco seasoning. Top with salsa and shredded lettuce/carrots.
Spaghetti is pretty quick, too [and children eat it without fussing ... lol].
A book that I highly recommend for super-quick vegan meals is the McDougall Quick & Easy Cookbook. Lots and lots of recipes for heart-healthy fast recipes. If you are cooking just for yourself, I also recommend Table For Two by Jo Stepaniak. It is one of my most-used cookbooks and the recipes are very dependable and tasty.
