Relatively quick & simple vegan meals?
I'd like to eat a lot more vegan meals, but I basically only have two recipes under my belt:
(1) Napolitana(ish?) Rice: Fry up some onions, garlic, diced tomatoes and salt. Add some boiled vegies. Serve with brown rice. Nummy.
(2) Bean salad (Cannelli Beans + Kidney Beans + Red Onion + Lemon Juice + Pepper = Yum!). Nice with brown rice, too.
Does anyone have any other tried-and tested suggestions for meals? I've had a look on the internet, but there's thousands of recipes and I have no idea which are any good.
I work weekends and am usually in the situation where I have to get a meal together in under an hour. If a meal produces leftovers, that's a bonus.
