This is sensational. There is nothing wrong whatsoever in what you are planning and if anything it might be slightly more conservative than necessary,
but there is nothing wrong with that at all and in fact is just helps to assure that your transition is absolutely optimal. Whatever happens next, 1 whole week of juice is a very smart and healthy way to begin the transition.
The only tinkering i might do (if it was me) would be to include some mostly raw vegetables in the 2nd week in alternating meals with the fruit meals, such foods as say spinach or leafy lettuce, onions, red or yellow bells and tomatoes. I do know that bells and tomatoes are fruits botanically speaking, but not everybody thinks of them as fruits so i'm just wanting to be clear that i think they are fine to include at this time. I might also make a vitamixed soup of other mixed vegetables, but that's just me.
By about 15 days of breaking the fast you'd likely not be pushing yourself too fast if you were to have some fish and other healthy foods outside the fruit and vegetable kingdom,
but all the more power to you if you chose to wait longer. Most people tend to be too impatient in breaking a fast, sometimes decidedly to their detriment, so since you are choosing (not erring) on the side of caution, this is indeed to be commended.
