For me, so much of the appeal is culinary and cultural, as Angela hinted at. I love the taste of...well, certain sophisticated drinks I might not should mention, and it's just fun to try things. I think for me, the best thing to do is just stop drinking to feel the alcohol. A sample here and there isn't going to hurt.
...with the exception of liquor. It doesn't take much of that to screw with my head. And without habitual drinking, my tolerance isn't going to increase anytime soon.
